Scientists in China have discovered that a powdered form of apple cider vinegar (ACVP) might help reverse liver damage caused by eating high-fat diets. The study, carried out by researchers from Jiangnan University and Sichuan University, revealed that ACVP not only reduced liver fat and inflammation in mice but also helped restore a healthy balance of gut bacteria and metabolic processes. What the Study Did and Why It Matters
For the study, mice were split into three groups: one was fed a normal diet, another was given a high-fat diet (HFD), and a third received the high-fat diet along with daily doses of apple cider vinegar powder. Over 12 weeks, researchers tracked body weight, liver health, blood markers, and gut bacteria composition.
 
The mice on the high-fat diet gained significant weight and developed liver swelling, fat buildup in the liver (a condition called hepatic steatosis), and increased levels of liver enzymes like ALT and AST—classic signs of liver damage.
 
However, mice that received ACVP showed:
-26% less weight gain
-48% lower ALT and 21.5% lower AST levels
-Reduced liver fat and inflammation
-Improved cholesterol and glucose levels
 
Apple Cider Vinegar Helps Rebuild a Healthy Gut
One of the most fascinating findings was the impact ACVP had on the gut microbiome. Mice on the high-fat diet had a disrupted mix of bacteria, with fewer good microbes and more harmful ones. ACVP helped reverse this imbalance by increasing helpful bacteria like Muribaculaceae, Akkermansia, and Blautia—all known for supporting gut health, reducing inflammation, and helping with digestion.
 
At the same time, ACVP decreased the levels of harmful bacteria like Desulfobacterota, which produce toxic substances that can worsen liver damage.
 
Restoring Balance in the Body’s Internal Systems
The researchers also looked at the substances (metabolites) produced in the gut. In the high-fat group, 38 important metabolites were out of balance, including bile acids and fatty compounds that can promote inflammation. ACVP restored many of these to healthy levels. For example:
 
-It reduced pro-inflammatory compounds like DHOME
-It brought back beneficial metabolites like indolelactate and trans-ferulic acid
-It supported better bile acid metabolism and reduced toxic build-up
 
These changes weren’t just local. They were strongly connected to improved liver health and reduced levels of inflammatory markers in the body.< br />  
Why This Study Is Important
This study suggests that apple cider vinegar powder could be a simple, food-based remedy to help people dealing with obesity-related liver issues. By acting on both the gut and liver, it helps break the cycle of inflammation and fat accumulation caused by modern diets.
 
The researchers believe that the key benefits come from ACVP’s polyphenols (natural plant compounds) and acetic acid, which have antioxidant and anti-inflammatory effects. These ingredients seem to act like a “reset button” for the gut-liver connection.
 
While this study was done in mice, the results are promising enough to suggest that ACVP might have similar effects in humans, especially for people with fatty liver disease, high cholesterol, or blood sugar issues. Future clinical trials will be needed to confirm these results and determine the best dosages.
 
This could offer a cost-effective, natural option for those looking to improve their metabolic health without drugs—just a teaspoon of this common kitchen ingredient in powder form could have real health value.
