Cooking processed meats at high temperatures—such as grilling, frying, or roasting—can further increase the production of harmful compounds. This creates a double threat: chemical preservatives from processing and carcinogens produced through cooking. Together, these raise the likelihood of cancer development over time, especially in the digestive tract.

Scientists are calling for urgent measures including clear front-of-pack cancer warnings, public education campaigns, and strict regulation on nitrite use. They argue that most consumers remain unaware that their breakfast bacon or lunchtime ham sandwich could be contributing to serious long-term health risks. The team also recommends encouraging the food industry to develop nitrite-free alternatives using safer preservation methods.

Bowel cancer is one of the leading causes of cancer-related deaths worldwide, yet it is among the most preventable types. Researchers emphasize that reducing nitrite exposure through dietary choices and stricter regulations could save thousands of lives each year.
